Grilled Catfish

2-1/2 lbs. Simmons farm-raised catfish
1/4 teaspoon white pepper
1/2 teaspoon garlic salt

Sprinkle catfish with pepper and garlic salt. Place catfish in well-greased fish grilling basket over hot coals. Grill 10 minutes per inch of thickness, turning once, until fish flakes easily. Serves 4.
