Catfish Parmesan

Catfish Parmesan

3 lbs. Simmons farm-raised catfish
2 cups dry breadcrumbs
3/4 cup Parmesan cheese
1/4 cup chopped parsley
1 teaspoon paprika
1/2 teaspoon leaf oregano
1/2 teaspoon pepper
2 teaspoons salt
1/4 teaspoon leaf basil
3/4 cup melted margarine or cooking oil
Lemon wedges

Combine breadcrumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Dip catfish in melted margarine and roll in breadcrumb mixture. Arrange fish in a well-greased baking dish, 14x9x2 inches. Bake in a hot oven, 375 degrees F., for 25 minutes or until fish flakes easily when tested with a fork. Garnish with lemon wedges.  Serves 6.
